Trinity’s Adult Nurture Team is offering a special Wellsprings of Wisdom service project opportunity to be held on Wednesday, December 4. We’ll meet for dinner in the Community Hall at 6:00 as we usually do for the classes. Then after the meal, we’ll work together to pack bags to be distributed at the Food Pantry on the following Thursday morning.
The meal will feature as the main dish one of the recipes that uses ingredients typically given out by the Pantry. We have chosen a meatless beans and rice recipe, but will serve sausage on the side for the meat eaters. There will, of course, also be salad and dessert.
We are asking everyone to bring some of the recipe ingredients to use to fill the bags, and we’ll also use some of the items from the Food Pantry stock. Here is the recipe:
INGREDIENTS:
- 2 – 15 ounce cans black or pinto beans, drained
- ¼ cup uncooked white rice
- 1 ½ cups broth
- 1 teaspoon olive oil or vegetable oil
- 1 teaspoon ground cumin
- ¼ teaspoon pepper
- 1 onion, chopped
- 2 cloves garlic, minced
DIRECTIONS:
In a large pot over medium-high heat, heat the oil. Add the onion and garlic and cook for 4 minutes. Add the rice and cook for two more minutes. Add the broth, bring to a boil, cover and lower the heat, and cook for 20 minutes. Add the spices and beans. Season to taste. Heat and serve. – Makes 8 servings
PLEASE BRING SOME (whatever you can) OF THESE INGREDIENTS:
- Olive oil or vegetable oil
- Onions
- Garlic
- Canned or boxed broth (chicken, beef, or vegetable)
- Ground cumin (can be purchased in bulk at HEB, Central Mkt., or Wheatsville)
- Black pepper
- Canned black or pinto beans
- White rice
Please note that Food Pantry regulations do not allow us to divide up large quantities of items, except for the spices. Therefore, please do not bring very large packages or cans.
